Generally, the first cut to get the maze design into the field happens when the corn is around 18 to 36 inches tall. Since there is usually some regrowth, it is often a good idea to go back through the trails a few more times.

We can still cut a maze into taller corn if weather or scheduling causes delays, but it gets harder to stay accurate to the design and it is tougher on the mower.
That window usually works well for a few practical reasons:
The danger with cutting too early is that it can be harder to see the trails clearly when you come back for later passes. The corn can also try to grow back in the trails, which means more cleanup and extra herbicide work to keep the paths in good shape.
It gets harder to cut cleanly, harder to move through the field, and you usually end up with more debris and more trail cleanup. I can definitely cut taller corn if we need to for whatever reason though.
The first cut is mostly about getting the design into the maze. Most folks I cut for have a zero-turn mower of their own, and they will do several mowing passes between the initial cut and opening for the season.
